In The Kitchen...

I've been trying some new recipes lately, some really good and some just OK.
This first recipe is from The Pioneer Woman, click on the link for the recipe. They were melt in your mouth good. They freeze easy so you can enjoy them whenever you'd like.Orange Muffins With Brown Sugar Glaze
Next up - French Breakfast Puffs, again from The Pioneer Woman. These were pretty tasty but they call for Crisco which I think is gross. If you can get past that then great.



I also tried her Breakfast Burritos To Go, they were really good we've had them a few times and they freeze great! I put them on my home school blog.

Here's a new and improved (healthier) version of a Quiche recipe my sister in law Amy gave me. I loved the original but I think this is almost just as good without the guilt.

1. Preheat oven to 375
2. Layer the bottom of dish with about 1 inch of shredded hash browns, season w/ salt and pepper.
3. Put 4 slivers of transfat free spread on top and brown in oven for about 20 min.
4. Chop up whatever toppings you'd like, veggies, meat, cheese, and layer over hashbrowns.
5. In separate bowl mix 4 egg whites, 2 eggs, 1/2 c. cauliflower puree, 1 c. milk6. Pour egg mixture over toppings.
7. Cook for about 40-45 min.
Like the others, this too can be frozen for up to 3 months. If you'd like to make an extra for another time just follow steps 1-4 and stick in freezer. When your want to have it then just mix up your eggs, milk and cauliflower, pour and bake.


For anyone who hasn't read Deceptively Delicious go get it, it's a cook book with great recipes that sneak veggie purees into your kids meals without them even knowing. I keep cauliflower puree among others in my freezer in these snack size bags ready to go. I have tried most of the recipes in it and for the first time made something I didn't like...Turkey Meatloaf. I don't like meat so that could have been the problem (duh) but my kids do, and they thought it was yucky too! Oh well I guess even Jessica Seinfeld isn't perfect.

    Recipes all look yummie! I love to cook and do so alot. I'm impressed with your bags of pureed veggies. My problem with all the sweets and goodies is that I make them 'for the kids' and then I end up eating them all!

  4. Edie - I end up eating them too, that's why every time I start cooking a lot I end up stopping. :)

    Amy - No I don't have Rachel Ray's regular 30 minute meal book but I do have her kid version of it. I haven't tried anything yet, I will probably wait until I'm done trying all of D.D. recipes first.

  8. I have another question, sorry. So what do you do with your frozen burritos when you are ready to eat them? I just did some and was trying to decide what's the best way to eat them, do you just throw them in the oven with the tinfoil on for a few minutes or do you unwrap them and microwave them? Do they get dried out that way? Ok, done with the questions. Sorry, I just don't want to ruin them!
