The Most Important Meal Of The Day

Breakfast Burritos To Go
I'm pledging to do better at providing healthy breakfasts for my kiddos. I love breakfast but I'm also a morning person and that means I'm super busy getting started on my many lists. I was reminded the other day of how important breakfast is to our nutrition. I am also vowing to go back to buying only whole grain cereals so when we are in a hurry they aren't loaded up on sugar. I mean really, why would I want to do that when I'm their teacher? :) It's like giving them a dessert for breakfast (which I've been known to do). I am also bored with the recipes I have so I got this super easy idea from The Pioneer Woman . I didn't follow it exactly, I just used what I wanted or had. Next time I'll throw in veggie sausage but for today I cut up chunks of turkey and it turned out really good.Dice up some potatoes, boil them for a few minutes and throw them in a hot pan with a little olive oil. Dice up some onion and red peppers and add to the skillet. In a side bowl, mix eggs (I used 2 whole and 5 whites), chopped chives, and a handful of cheese. After the veggies in the skillet are browned, add the egg mixture. Season the heck out of them with whatever you want. Throw a tortilla on your burner and brown it all up. I would have used whole wheat but I found mine were expired. Wrap them tightly with foil to hold in the heat.
And there you have it, a super healthy meal. This means your kids won't be saying their hungry again an hour into your school day.

Note* The name, not that your kids are going anywhere but hey maybe you're heading off on your Friday morning field trip!
